Have you seen Kim’s?  It’s gone viral, as if someone mined the biggest diamond from the Earth and stuck it on a band.  Yes, it’s huge.  Mazel tov.  But isn’t there more to an engagement ring than just, you know… Size?

We can’t escape the NSA and apparently neither can the rest of the world.  Big Brother security is watching everyone.  And if you thought political communication wasn’t bad enough, apparently Obama wasn’t even aware of NSA’s spying habits on allies.  That’s a wee bit of a problem.  Em-bar-ass-ing.  Our tail’s in between our legs.

What’s even worse than international anger is international laughter.  Does a sanction for international mockery exist?  Because we’ll probably make one up.

And if you haven’t heard enough controversy about the benefits and hazards of drinking coffee, according to some researchers, 2:16PM is the exact best time for you to drink your coffee.  Mornings just got longer.

Let’s talk lunch.

You know the problem with it?  Nothing, it’s perfect.  It does it’s job and usually tastes awesome.  Still, if someone were to create say, whatayacallit, eggplant wraps drowned in tomato sauce and gooey cheese, you’d at least give it a try.  And at most give it a try.

Italian Eggplant Wraps

(yields 6 wraps)

Ingredients:

2 medium eggplants

2 tablespoons olive oil

1 teaspoon garlic

1 teaspoon ground basil

1 cup tomato sauce

6 vine tomatoes, sliced

1 cup fresh mozzarella, sliced or shredded

6 whole what wraps

Preparation:

Heat a large skillet over medium heat and add olive oil. Meanwhile, wash eggplants and chop into 1-inch pieces. When pan is ready, transfer eggplant to heated surface and sprinkle with garlic and basil. Cook for 10-15 minutes, or until cooked through.

Once done, remove from heat and transfer to a bowl. Slice tomatoes into quarters and add to the eggplant bowl. Add mozzarella cheese as well.

Grill or toast wraps. When ready, spread tomato sauce evenly onto each wrap. Then, distribute the eggplant, tomato and mozzarella mixture. Place in microwave or broil wraps until cheese is lightly melted. Remove and let cool a minute, then serve.
