My week. It started out pretty good with a weekend full of Fall walks, town festivals, afternoon beer and brunch. Plus, the Red Sox last-minute victory on Saturday means one thing: World Series. Then Monday came.
The government is finally open after a signed bill, but the Senate still can’t pay it’s bills and the House still wants to defund Obamacare. The debt ceiling has been extended, but that really is no surprise. All that means is that come January and February of next year, we’ll still be in a cat fight and we’ll still have decisions to make.
There’s no rush, really. May the defaults and global market panic ensue.
Russia is still having migration issues. While shopping centers are being ransacked and warehouses raided, we are all shocked because the struggle between nationalists and migrants is totally something new and couldn’t possibly get any worse.
I read somewhere that a clean and organized desk may promote healthy eating and conventionality. I have an extremely messy desk, so I’m assuming it means I don’t follow conformity, I eat whatever I want and I’m a really creative, relaxed person. Just reading between the lines.
Or I could just do most of my work sitting cross legged on the floor, which probably means I’m in kindergarten.
Speaking of kindergarten, let’s switch to waffles and maple syrup… Because I’m unconventional and I can.
Waffles. They’re great, but they could be greater. More flavor. More texture. Healthier. Crispier. In short: they need cinnamon, applesauce, and a teensy weensy bit of sugar.

Apple Cinnamon Waffles
(yields 6 waffles)
Ingredients:
2 cups white whole wheat flour
2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
pinch of all-spice
1 egg
1/2 cup applesauce
1 1/2 cups milk
waffle iron
Preparation:
Pre-heat waffle iron. Combine flour, baking powder, sugar, salt, and spices together in a medium bowl.
In a large bowl, beat egg with a whisk. Stir in applesauce and milk. Slowly add flour mixture to the bowl with the wet ingredients.
Spray waffle iron with non-stick cooking spray. Pour waffle batter onto hot waffle iron and cook until golden brown. Serve warm with butter and warm syrup.
