Strawberry Creme Pound Cake

I made us more pound cake.

Now don’t be mad, but my brain has been a bit flakey about posting healthy recipes recently.

The act of browning butter and creaming it with granulated sugar is an act I’ve become all too familiar with. Of course, nothing sounds better than the addition of strawberries and creamy Greek yogurt. When mixed together and stuffed into the back of the oven, the smell that fills the kitchen works for me. It really does.

Now you really can’t be mad at me, because this recipe is down right the bees knees. And perfect for brunch. Let’s discuss:

Father’s Day is coming up on Sunday. I personally think this would make quite the addition to your family brunch. I mean, what could men possibly love more than baseball, grilled steak, and strawberry pound cake? Can’t say I know.

Speaking of which… I want to give a shout out to one of the most irritating and favorite people in the whole world… My dad. I know it’s a bit early but if there is one thing he likes it’s for people to be early rather than late.

Papa, Thank you for:

1. Always giving me your black baseball hat when I was 4. I really just wanted to be more like you.

2. Coaching all my soccer and basketball teams until you realized oranges and chocolate chip cookies simply weren’t enough for you to stay…

3. Not killing my first boyfriend in 6th grade when you found us alone in the closet (I still argue he was just giving me a bracelet).

4. Helping me with some science project — don’t all dads have to do this at some point?

5. Paying for college. I’m sorry that my liberal arts education and Political Science degree will never be able to repay you.

And lastly, 6. Always supporting me in everything I did — giving up soccer, traveling to Kenya, to Italy, and to Malawi, changing majors, trying yoga, ruining your kitchen with my cooking, and deciding to move to Seattle in August without much plan or detail… I know you really love it when I do that.

I love you, papa!

Strawberry Creme Pound Cake

(yields 1 loaf, 10 slices)

adapted from Mocha Vanilla Bean Pound Cake

Ingredients:

1 stick butter, cut into pieces

1 cup sugar

2 eggs

2 cups strawberries, sliced and blended

6 oz strawberry Greek yogurt

2 tsp vanilla extract

1 1/2 cups cake flour

1 tsp baking powder

1/2 tsp salt

3 large strawberries, sliced horizontally

Preparation:

Preheat oven to 375.

In a large bowl, cream the butter and sugar together. Once creamed, add each egg, one at a time, until creamy. Add in blended strawberries, Greek yogurt, and vanilla extract. Continue to mix for two minutes.

Meanwhile, combine flour, baking powder, and salt in a medium bowl. Stir once, then add to the wet ingredients. Whisk until combined and smooth.

Pour mixture into a lightly greased loaf pan and place sliced strawberries on top in a line. Bake for 50 minutes, or until a toothpick comes out clean.

Let cool about 10 minutes. Garnish with powdered sugar.
