World Cup athletes? I’m even more excited about that.
Soccer players equal muscular lean bodies, foreign accents, and rugged handsomeness. What’s not to like? And booze. That’s something I like, too.
Alcohol: It’s been happening a lot around here. With the backyard bash last week, bonfires, eating out, trips to the beach, visiting friends, and the World Cup, it’s been a bit boozy.
But sometimes you just need peace and quiet. Away from most things. But with a drink. Find a little place in the woods or on the water… You know, like a log cabin or a lighthouse. And bring something alcoholic. This. Bring this.
I know you’re pumped to show off your alcohol tolerance skills every chance you get. But since the temperature’s climbed and I’ve spotted fresh mint at the farmer’s market between the blocks of cheese and sunflowers, I’ve decided to switch things up. Hence: popsicles with rum. We’re getting wacky today.
This is what happened: I minced some fresh, gorgeously green mint and stirred it into a combination of light coconut milk and honey. But I didn’t stop there…
Get your sour face ready, because I added in a good dose of fresh lime juice. Pucker up.
Up last? Rum. But you can still drive home and be in bed by midnight.
Rum, mint, coconut, honey and lime juice. You’re done.
And just in time for America’s birthday. Abe Lincoln would thank you.
COCONUT MOJITO COCKTAILS
adapted from Fed+Fit
(yields 8 to 12 popsicles)
INGREDIENTS:
1/4 cup raw honey
1/2 cup fresh lime juice
1,15 ounce coconut milk
1/4 cup rum
1 to 2 tablespoons finely chopped mint
1/4 cup sparking water
PREPARATION:
In a small bowl, whisk the honey and lime juice until dissolved. Add the coconut milk, rum, and mint, stirring to combine. Add the water and stir once.
Divide the mixture between 8 to 12 popsicle molds and set the sticks in place. Transfer to the freezer and chill overnight, or until solid. Freezing time may take a bit longer because of the alcohol.
When ready to eat, remove from freezer and run popsicle molds under warm water to dispense popsicle. Serve immediately and enjoy!
