Hey ya’ll.
Lace cookies. Have you heard of them? Apparently they are the daintiest and most delicate cookies out there. But they have holes in them. What’s up with that? I’m pretty sure lace cookies are just a term used for cookies that turn out horribly wrong and barely count as food because they’re all basically full of air.
Thank gahhhoooodness I passed this “are you smart enough to be a citizen” test… With distinction of course. After all, I did study the theory and history of politics for four freaking years. Rest easy, mom and papa. 120 thousand dollars of education has been totally worth it because I now know that, if the government were ever to pass a law taking away guaranteed birthright citizenship, I could still be one. And it’s all thanks to Thomas Paine.
Cold? Yeah, me too. Apparently everyone in the US is undergoing hallucinations as a “polar vortex” of extreme temperatures sweeps across the nation. This coming after a huge snow storm that hit the Midwest and Northeast a few days ago. Work was canceled, schools were closed and thousands of flights were delayed across the country. And Summer is 162 days away.
Until then, I’ll be cozying on up by the fire with some chocolate chocolate chip oat waffles with a side of winter comfort.
Chocolate Chocolate Chip Oat Waffles
adapted from The Joy of Cooking
(yields 6-8 large waffles)
Ingredients:
1 1/4 cups white whole wheat flour
1/2 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
1/4 cup cane sugar
4 to 8 tablespoons of butter, melted
2 large eggs
1 egg white
1 1/2 cups milk
1 teaspoon vanilla extract

waffle iron
Preparation:
Combine flour, rolled oats, baking powder, salt, cocoa and sugar together in a large bowl. Stir once and set aside.
In another large bowl, heat butter in the microwave for 30 to 4o seconds, or until melted. Stir in eggs and egg white until lightly beaten. Add to the flour mixture and stir very well.
Pour in milk, then vanilla extract. Use a wooden spoon or spatula to mix all the batter together until smooth. Fold in chocolate chips, however many you want, until taste.
Heat waffle iron. When ready, scoop 1/4 cup to 1/2 cup of batter onto the pre-sprayed surface and cook according to the manufacturers directions. Repeat this step until all the batter has been used.
