I hate bikinis.
You know those women who look like absolute babes in bikinis? Yup… Those are my friends. Their thighs don’t rub together, their abs are basically perfect, and they get the most luscious and curled hair when it gets wet in the water. That’s weird. I’m not like that. It’s because I love chocolate-covered things and bread doused in butter and garlic. Duh.
But I still want to look like a babe in one.
I wanna feel like I can totally rock a bikini. It’s true. It might be totally impossible, but deal with it.

Brown Butter Vanilla Bean Banana Pancakes
adapted from How Sweet It Is
(yields 10 large pancakes, 5 servings)
Ingredients:
1/4 cup butter
1 cup whole wheat pastry flour
1 cup all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/4 tsp sea salt
1/2 tsp cinnamon
1-3/4 cup vanilla almond milk
1 large egg
1 tbsp vanilla bean paste
3 small bananas, sliced
Preparation:
Heat butter in a small saucepan over medium-low heat. Whisk constantly until brown bits form on the bottom, about 5-6 minutes. Remove from heat and set aside.
In a large bowl, mix together flour, sugar, baking powder, cinnamon and salt. In a small bowl, whisk together almond milk, egg and vanilla bean paste. Sit in melted butter. Add wet ingredients to dry, mixing until just combined.
Heat a griddle or skillet over medium heat. Add a bit of butter to the griddle and using a 1/4 measuring cup, spoon batter into pan. Add banana slices to the tops of each pancake. Cook until bubbles form on top, then flip and cook for 1-2 minutes more. Top with butter and maple syrup.
